1. Citras Iced Tea & serve in a shampaine glass
Brew at 180 F for 1 minute and pour over ice and add some lemon or lime. (sparkling water/coconut if you like; ratio is 1:1)
2. Gin Cocktail
Brew at 180 F for 1 min pour over ice and add 1 shot of Japanese Gin/Vodka, 1 table spoon of agave. And give your guest a slice of lemon to enjoy the color/flavor changing effect.
Reason:
We went back to Japan to find matcha but we came accross the idea of blue green tea in Shizuoka city. It was so beautiful and refreshing to enjoy iced. So we added butterfly pea flowers to our sencha and a hint of lemongrass to pair with lemon or lime. The anthocyanin (polyhenol) in butterfly peas relaxes your eye strain and has anti-aging effect. Rest your eyes with this beautiful tea to take some time and relax.

Twilight Blossom, or blue butterfly tea, is a bold blend of green tea, butterfly pea and lemongrass. The tea is naturally a bright cobalt blue.
But when you add fruit juice containing citric acid, such as lemon or lime, it will turn purple! The changes are much like the colors you see in a rainbow.Butterfly pea flowers are popular in a lot of teas served in Thailand, where they grow plentifully. It is a plant that belongs to the legume family and has bright blue flowers from a polyphenol named anthocyanin, which help relieve eye strain and have anti-aging effects. Fortunately, butterfly pea contains four times as much anthocyanin as blueberries!
Meanwhile, lemongrass contains a beneficial antipathogenic substance called citral, which has the same scent as lemon! Lemongrass also has a stimulating effect on the brain and has the effect of refreshing your mind when you are tired or lack energy. We use lemongrass to amplify the aroma and green tea to add depth to the flavor, creating a full-bodied flavored tea.

I saw how this tea turned purple when lemon is added to it at the owner’s booth so I decided to try to make a cocktail with it. I added some lemon and gin. My friends enjoyed the color changing vibe and thought it tasted good too. Very fun!
