Matcha
抹茶 Means "Ground Tea"
Made from shade-grown Tencha (碾茶)
碾(ten) means stone-ground
茶(cha) means tea
Usually shaded from 21-28 days before harvest
Used by monks in ceremonies to focus and meditate
60-80mg caffeine/serving
Perfect for mornings & concentration
High in umami
Has rich, creamy, fresh grassy flavors
Hojicha
焙じ茶 Means "Roasted Tea"
Made from roasted Bancha (番茶)
番(ban) means harvested later
茶(cha) means tea
Usually harvested from May to August
Roasted at high heat to enjoy bancha’s aroma
